Three generations cook here: Rosa's recipes, her kids on the truck and the catering line, her grandson on the salsas. From a 300-guest wedding to Tuesday's office lunch — the food tastes like somebody's grandmother made it, because she did.

Weddings, birthdays, crew lunches on a job site — the truck parks, the window opens, and everyone orders their tacos hot off the plancha. Two hours of unlimited service, priced by headcount on the quote page.

Our family
It started with Rosa's Sunday table
In 1998, Rosa Delgado was the woman the whole parish asked to cook for weddings. Her mole took two days; her tortillas never met a package. When her son Marco bought a used lunch truck in 2015, the family stopped borrowing church kitchens — and Rosa del Valle became a business with three generations on the schedule: Rosa on recipes and quality control, Marco on the truck, Lucia running events, and grandson Diego earning his stripes on the salsa bar.
